today we are going to prepare Indian style bottlegourd and yogurt curry keep a wok on medium heat and add 1 tbsp clarified butter you can use oil instead let the ghee melt when the ghee melts reduce heat to low and put in the ginger paste and chopped green chilli if you would like a spicier dish, add more green chillies saute for a minute after a minute add in all the dry spices – turmeric powder, deghi mirch powder, salt, kasuri methi, garam masala and coriander powder stir until the spices combine well. heat should be on low we will roast the spices adding water 1 tbsp at a time and stirring continuously. roast for about 2-3 minutes add water whenever the spice mixture starts to dry up. this will prevent them from getting burnt carry on roasting the spice mixture by adding water whenever needed & keep stirring it all the time after 3 minutes of roasting the spices are well roasted we added 4 tbsp water in all now put in the chopped bottle gourd. remember to taste the bottle gourd before chopping. do not use bitter bottle gourd as it is harmful the chopped bottle gourd is kept in a bowl of water to prevent it from darkening do not put the water mix well and stir-roast the bottle gourd for 1-2 minutes. raise the heat to low-medium then add water and mix well cover with a lid and cook until the bottle gourd turns soft. keep the heat on low-medium keep checking & stirring in between frequently. in case the water dries out add a little more after about 15 minutes the bottle gourd has softened you can see it is soft but we need to dry out the remaining water raise the heat to high, add the cilantro and stir until the water dries up the extra water has dried out. put off the heat and put in the whisked yogurt the yogurt should not be sour mix nicely and transfer it to a bowl now prepare the tempering for the dish keep tadka pan on low heat and put in 1 tbsp desi ghee and let it melt put in the jeera and let it crackle for a few seconds now add the chopped dry red chilli and curry leaves stir for 10-15 seconds and transfer the tempering to the dish in the bowl garnish with a little cilantro here is our dish of the day – dahi wali lauki ki sabji or bottle gourd and yogurt curry it is very simple to prepare it. you can have it with roti or rice do try this dish and give your feedback if you like the recipe please share our video & subscribe to our channel to watch more videos. press the bell icon so you get our new video notifications. thank you
