thandai is a traditional cold drink prepared on the festivals of holi and mahashivratri you can prepare it on this holi. ingredients and quantities are given in the description box we are preparing thandai masala powder which you can use to prepare instant thandai let’s have a look at the ingredients needed 200 grams sugar 3 tbsp almonds 2 tbsp cashews 2 tbsp pistachios 2 tbsp fennel seeds 2 tbsp melon seeds 1 tbsp khus khus 1 tbsp chironji 1 tbsp dried rose petlals 15 green cardamom (seeds removed) 1 tsp black pepper powder 15 saffron strands first we will microwave all ingredients for 30 seconds each except the sugar, black pepper powder and saffron this will help dry up any external moisture on the ingredients if any grind all the ingredients now in batches first grind the fennel and cardamom seeds to a fine powder. Transfer to a large bowl. next grind the almonds, cashews, pistachios and half the sugar to a powder on pulse mode only for few seconds each time. Transfer to the bowl grind the chironji, melon seeds, khus khus, remaining sugar, rose petals, saffron and black pepper powder to a fine powder. Transfer these as well to the bowl mix all ingredients with a spoon first then transfer to a grinder jar and blend a few times on pulse mode so that a uniform mixture is obtained our instant thandai masala powder is ready store the thandai masala powder in an airtight bottle. It will keep good for about 2 months o make thandai, put 3-4 tbsp thandai powder in a glass of milk.
