today we are preparing amritsari nutri kulcha, the popular street food of Amritsar it is prepared with soybean nuggets as the main ingredient it is a complete meal and very easy to prepare at home here are the ingredients we need. these are listed in the description box with the required quantities 2-3 tbsp oil 100 grams nutri nuggets or soybean nuggets 2 med-sized onions, chopped small 2 med-sized tomatoes, chopped small 1 tbsp ginger garlic paste 1 bell pepper, chopped small 3 tbsp dahi / yogurt 1 tbsp soya sauce 1 tsp red chilli sauce 1 tsp green chilli sauce 1 tsp coriander powder 1/2 tsp garam masala 1 tsp salt 1 tsp jeera / cumin seeds 1/2 tsp deghi mirch / red chilli powder only since we are adding the chilli sauces as well let us now start by boiling the soybean chunks add water to the kadhai / wok and let it heat up on medium heat when the water starts boiling put in the soya chunks. keep heat on high we have used large soya chunks but you can use smaller ones if you prefer we have not added salt in the water. you may if you desire give a nice mix & let them boil until they are soft. keep stirring from time to time we will boil them for 5 minutes after 4 minutes the soya chunks are soft. put off the heat and strain out the water then wash well under running water until their smell goes off keep aside after washing and start preparing the masala keep the pan on medium heat add in 3 tbsp oil and let it heat up a bit then add in the cumin seeds & let them crackle for about 15 seconds add in the chopped onions saute until they turn light pink once the onions are done add in the ginger-garlic paste and saute for 2-3 minutes reduce & raise the heat as needed now put in the chopped tomatoes and the chopped bell pepper as well stir continuously and saute for 6 -7 minutes after 3-4 minutes of sauteeing add the dry spices red chilli powder, salt, coriander powder, garam masala. add 1 tsp garam masala not 1/2 tsp as said earlier mix well and saute for another 2 minutes add a little water (about 1/4 cup) if the masala is getting dry & finish sauteeing now reduce heat to low & now put in the dahi. keeping on low heat will prevent the dahi from splitting mix immediately & stir for a minute cook the masala for another 2-3 minutes or until the oil separates out the oil has separated out add in the sauces the soya sauce, red chili sauce & green chili sauce mix until the sauces combine nicely add in the boiled nutri nuggets and a little cilantro stir until everything mixes well. raise heat to medium after mixing check the salt and add if needed. we added another 1/2 tsp salt. you can add after tasting mix well you can also add more chili sauce if you need at this time after adding the nuggets we cooked it for 5 minutes. put in 1 cup water we need a little bit of gravy as we will be eating it with kulcha raise heat to high & let the water come to a boil the water is boiling. reduce heat to low & cover with a lid. cook for 5-7 minutes & stir frequently in between after 6-7 minutes out nutri nugget dish is ready. the gravy has mixed well and thickened as well cover and keep it aside and in the meantime, we will pan roast the kulchas with some butter keep a tawa or pan on low medium heat and drop a little butter in it. let it melt roast the kulcha on both sides until light golden as shown. roast on low heat in this way roast all the kulchas one at a time adding a little butter each time the kulchas are roasted and the nutri is ready. let us serve the nutri kulcha dish here is our amritsari nutri kulcha dish. do try and give your feedback. you can get ready made kulchas at any bakery if you like the recipe please share our video & subscribe to our channel. thanks for watching
