today we are preparing rose thandai, a unique summer beverage using homemade gulkand & homemade rose syrup ingredients and quantities are listed in the description box we need 1/2 liter full-fat milk 10 almonds 10 cashew nuts 1 tbsp melon seeds 4 tsp khus khus these 4 dry fruits have been presoaked for 2 hours in water and the water drained out we have also deskinned the almonds 1/2 tsp cardamom powder 1/2 tsp black pepper powder a pinch of saffron 2 tbsp homemade gulkand. check out my video recipe link on screen to watch how you can prepare it at home 2 tbsp homemade rose syrup.check out my video recipe link on screen to watch how you can prepare it at home put the almonds, cashew nuts, melon seeds and, khus-khus in a grinder jar now add just enough milk to help grind the ingredients to a fine paste remove the paste to a bowl add a little milk to wash out the remaining paste stuck in the jar and keep this paste aside we will start making the thandai now put the milk in a kadhai as well as the fine paste also add in the cardamom powder, black pepper powder and saffron keep the heat on medium and let the milk come to a boil. keep stirring once the milk starts to boil reduce heat to low and cook it for 4-5 minutes until it thickens a bit. keep stirring constantly keep scraping off the sides as well after 5 minutes the thandai mixture has thickened. put off the heat and transfer it to a bowl cover it with a wire mesh and let it cool down completely while the thandai is cooling down grind the gulkand with a little milk strain out the ground gulkand and keep aside once the thandai has completely cooled down add in the rose syrup and the ground gulkand-milk mixture blend this mixture for a few seconds. this will also help to blend in the thick cream layer on top our rose thandai is ready. cover it and keep in the refrigerator to chill nicely the thandai is ready to serve. pour into glasses, garnish with a few rose petals and serve if you feel it is less sweet add a little more rose syrup (2.5 tbsp instead of 2 tbsp). we prefer less sweet beverages you can see that the consistency of the thandai ought to be thick here is our recipe of the day -rose thandai. serve it well chilled. do try it and share your experience it is a very healthy and cooling beverage for summers if you like the recipe please share our video & subscribe to our channel for more unique recipes and press the bell icon to receive our new video notifications thanks for watching
